I am new to the E scrapping business. I have a lot of old 30 pin simms, Are they treated differently than the 72pin or larger simms?

Memory class is only dependent on the material of the edge connectors (fingers). Gold, silver/tin, and fingerless.
Connector (pin) count isn’t considered.

Some of the 30 pin simms have chips on both sides and are heavier than ones that have chips on one side, are they still graded by weight and finger material?

Yes. More modules makes more weight. More weight makes more value. Otherwise... the classes don’t change.

Most 30 pin SIMMs will be a tin or silver contact. And the vast majority of non gold memory is old SIMMs. The prices generally reflect that.
If you happen to have gold finger SIMMs, the blanket rate for gold finger memory would actually be over paying for them. ;)
