If I pull the board from the processor what CPU chip does it fall under?

It may downgrade the board from slot processor to fingered card should the fingers remain intact. If the fingers get removed along with the actual chip, you will be looking at a mid-grade board most likely. My advice is don't remove it so you can get slot processor pricing.

I agree, the best way to sell a Slot Processor is intact. Everything said is correct about the results. The chip itself would likely pay as a NoPin because you will probably not get the pins out intact, and it will have a metal cap.

Save the time and trouble and earn the most by leaving them as is (of course you must remove it from the plastic case and heatsink, but I assume you know that.)

It will reduce the board considerably. How much? That depends, but it will likely be more than 1/2 only because once a board is modified, the accepted known value becomes invalid and at that point we are merely guessing on value. When it comes to buying, we like to avoid guessing so I would suggest leaving the boards unaltered.
