I don't want to sound rude, but almost every question you ask can be answered by looking at the "E-scrap Gallery", or other sections of this site.

The short answer is take it apart.

Judging from what I see in the photo, the cards in the middle are easily removed. Post photos of them here and boardsort will tell you what grade they are. The chassis appears to be steel. Test with a magnet to find out if it's non-magnetic stainless or not. The power supplies can be removed and if you desire, strip them of any transformers or heatsinks inside. Depending on age of the system, you may find gold cap chips in there. I've seen some nortel boards use gold cap chips and others use black fiber intel chips. If there's a hard drive inside, wipe it with a disk wiping utility and then scrap it for the controller board and metal. Anything else you are unsure of, photograph it and post it here.

OK I found this board in it and it has 6 of those little chips on the board to pull out. I figured also it was high grade telecoms just wasn't sure.

It appears to be telecom grade. Can you snap a more close up photo of the one board that you show on the left in your first photo posted here along with clearer photos of the other boards. I had a hard time figuring out what was on the boards due to lighting and camera shake.

Just as kgryczan correctly stated, IMG_20140403_161154.jpg are telecom boards. As far as the others, I cannot see them well enough to know.
