Moose Scrapper has an excellent video on scrapping printers. In summary, disassemble the printer and take the following items out:

* print heads
* ink cartridges (if present inside)
* any boards found inside. These will range from low grade to peripheral grade.
* any motors that turn the rollers inside. These contain copper and can be sold with your copper bearing motors and transformers
* power cord

Anything that remains is either plastic or shred metal. Power cords can be clipped or detached and placed with your insulated wire or stripped. Printer data cables should be clipped of their ends and remaining wire can go with your insulated wire. Boardsort will buy cable ends. Check their price list for current pricing.
