When zoomed on pic only (clicking ) The bottom centre one is midgrade. Rest should be peripheral most likely. The board on top... you can remove the square ics from the sockets without issue (i always do) but leave the rest alone. That heataink /does/.need to be removed for peripheral. You /should/ be safe removing the tiny gold finger. It's not anywhere large enough for finger card class and doesn't affect the board's population at all.
Test the sink with a file or a flat head screwdriver. Simply gouge it if golden or orange you have copper (or an alloy) if silver you have aluminium and if a powdery grey that crumbles or splinters magnesium. All three materials are common with server boards.
