I am wondering about gold finger boards.... such as those on motherboards and other large boards. Does any board with gold fingers classify as gold fingered?

Most will be gold finger cards.
If it's really old or has limited ICs you'll want to post a picture since they may be peripheral (floppy drive controllers, port repeaters) or telco (ram boards, m2, fire pro), respectively.

Do you have an example of what an m2 board is... and firepro graphics cards are telco? What about nvidia gaming grapics cards etc.?

In the case of early FirePro many are telco.

M2 card below.

And yes, there are many finger cards that get upgraded to telco. Super high end 3D cards and current UHD and SUHD cards are prime candidates often, like the fire pro vega, which looks like a solid state drive. Most (all?) PCI SSDs are telco as well.
Telco is based on the ic population vs the board space. Things like the RDx that came out from AMD last year, some early suped up fire pro cards, 3Dfx, a few other Voodoo cards and the like which have accelerators and memory across the entire board on both sides make it there too.
