I have several hundred of these boards & need to know how to identify / categorize them
What about if I have removed the pin connectors from the boards?
Also, can anyone tell me if / how standard black IC's are categorized / best sold?

The RAM stick will go as tin/silver fingered RAM. Pack them separately from any gold fingered RAM to get best payout. The IC chip with the window I'm not sure of, but I believe the question was answered in another thread, so I suggest doing a forum search to see what was discussed. As for the boards, I believe they will go as follow from top to bottom (starting from third photo in post):

1: telecom
2: peripheral
3: telecom
4: peripheral
5: telecom
6: telecom
7: telecom
8: telecom

Ok, I found the answer on the chip in question

so, P4/Mac @ approx $6 / lb?

And to clarify, if I have removed the pin connectors and removed the pins, will the boards still be classified as telecom boards?

Stripping the pin connectors and pins from those boards will downgrade them. I would sell them as is.

Yes removing the ic chips on the telecom boards will no doubt drop the board grade
