I picked up about 40 units containing one of either of the following mainboards. The one on the left has an ebedded ESP800/400 CPU. The one on the right has an embedded ESP 8000 CPU. Will these go as Small Socket Motherboards?

If you got them out of a laptop then they are large socket motherboards. If they are from a regular PC then they looked like small socket, I guess.

Definitely more like PCs. They came out of "ComBrio Virtual Ntegrity (followed by) Gateway (or) Server" machines, rack mount type.

If the CPU chips are soldered, the boards will go as small socket motherboards.
