I was given a small stack of slick, unpopulated PCBDs that are missing all of the components. The engineer of the company that ordered the boards, for one reason or anther, never bothered to populate the boards with ICs, capacitors, resistors etc.

There aren't any gold pads or anything of that nature that I'm aware of. I have not taken pictures yet, and if needed I can do so.

What would they be classified as if accepted by Boardsort?

Most likely low grade if they have a connection layer in them. Copper, nickel, or tin; a thin sheet in between the pcb layers.
Older stuff (mid 80s and earlier) may not have that layer though and are generally worthless.

Look at one of the corner mount holes. If it has metallic colour of any kind, solid or stripes, around the hole it’s a sandwich board and has SOME value.
If not it’s likely a plain polymer board and of now value.
