Does Boardsort take boards out of tablets, and if so how are they graded?

Yes and it depends on the board.
Tablet boards are mostly telco, some will get peripheral and some special ones make cell phone class. Though that’s not common.

Does boards sort just take the board from tablets or the screen as well if the glass is removed?

Boardsort will buy any board from any item. Boards from tablets, and excepting the main board from cell phones as well, run the gambit; everything from peripheral to cell class.
Both occasionally have midgrade boards as well tucked in there. Like antenna mergers.
The general reality is boards from tablets tend to be peripheral and telco.
You can leave the glass screen attached but you hurt your payout twice doing so; you pay more for shipping and get a much lower class, probably midgrade. So ideally remove the screen.
If you are worried about recycling the screen itself there are hundreds of buyers for non cracked screens with a simple bing or google search.
Or if you just want to make sure the screen gets properly recycled just tape it up with packing tape across any glass and drop it into any cell phone recycling box at most electronics stores.
There are just two companies that ultimately recycle the glass LCD screens, and whole phone in general, in the US and both have no issue with bare screens that are properly taped.
