I think this is Telecom, but I wasn't sure because of the gold chips. How do I grade this?

Yes. In most cases; including yours.
Gorgeous Z80.

Thanks!

Are these all considered gold chip too? On two of them, some of the chips come out of sockets but there's still other soldered in place, should I remove the ones that are socketed?

On the last board pictured there's a Siemens device that's in gold? This board also has a 486 chip maybe?

Cyalume,

What are those boards out of? If you don't mind my asking......I have started buying from schools and counties and cities thru online auctions down here and I'm still learning what's good and what's not.

Siemens boards that's a plated heatsink not a normal gold cap. That said it's still heavy plate so a gold cap board is probably still the correct classification.

The Moto 68000 series CPU is Motorola foreign gold cap

Any gold cap CPU you can remove is worth more as a CPU then the gold cap board rate will give you. Always remove gold cap CPUs that are socketed.
