Are all these chips considered 8086? Only 2 have 8086 on them.

The 8087 is the only gold cap gold pins. I'm trying to search the forum to see about the others...

Without the cap may be pentium/mac ceramic...

Yeah without the gold caps I can't see those making 8086 but I could be wrong, if someone else can shed more light on these, go for it. I referenced Lost's post on CPUs/ICs
