There definitely appears to be a gold center contact in these coax ports, but they're entirely made of what I believe is brass, so I'm wondering if that would disqualify them from a connector end category?

Can you remove the gold pin? Then you have a simple answer. Gold Pin category. And brass. Though I am thinking the housing is just some type of cast. Not solid brass.
You could just hit it with a hammer and chisel. See what's going on with the piece.

I'm guessing the housing is die cast or zinc (or similar)

Should be okay in connector ends, if you have quite a few you can see how easy one is to open up and see if you want to pull all of them out not.
