I'm not really hip to the engineering lingo since I'm a technician. I'm just wondering, is it worth more money to de-solder these gold cap chips off the boards?

The NECs aren’t gold cap chips. Removing soldered CPUs will likely get you a pinless rate (sun if gold cap). The CPUs are worth more when on the board at gold cap chip board than they are off it.
