I have a guy who wants the gold pins of the metal socket motherboards and the gold connectors. I was wondering how bad does that degrade the motherboards? So I know what to do with them afterwards.

By default removing items like that will drop the classification to Mid Grade. If this person wants those parts, ask if they will purchase the whole mother board and let them deal with the rest.
