Is there a mechanical method for destroying data on a platter? Wire brush? Grinder? Or is software wiping or degaussing systems the only way?

The same magnets in. Drive can wipe out the data. There’s a post about doing that.
Yes, you can also simply remove the top layer. You see that in refining where they soak the platters in acid. A wire brush would work if you removed all of the surface. Leave any behind though, that limited data /could/ be recovered.
Acid works best for physical destruction.

Bcwipe has never failed me.
And a slightly quicker method for SSD? If you have a Mac:Linux/BSD system simply format with a fully provisioned NTFS or FAT partition with encryption.
The y reformat with ext4
Any old data is so borked with nonsense that recovery falls into the sun-1% rate. Good enough for any non-certified erasure.
