Would these two boards as they are be considered mid grade?
I understand the value of the non-ferrous that is attached, but just want to streamline this process if I can.

Most PSU boards will be low grade. I could see an argument for these getting bumped up to midgrade but I can't tell enough to be sure these can.

I have time and not quantity, so I remove gold fingers, heat sinks, copper coils, transformers, and "large" ic chips and what is left goes in my low-grade bin.

Both sides of board green, so doesn't that automatically make "midgrade"?

I'm wondering the same thing. Since low grade and mid grade has been the same price for a while.

Also, trim the gold fingers
