Hi, first post; I am completely new to E-scrap.
I have some network switches I want to process. I took one apart and would like some advice on what components are worth keeping and roughly their value. Any info is appreciated. I have uploaded some pictures for reference.

Welcome.
First off, try to organize and mark you images to make it easier to respond. You will get more replies. Generally, front and back photos of boards as well.

Everything in you photos can be scrapped for money, so not sure what you mean by what is worth keeping
Steel case in my area shred steel is bringing about $160-180 a ton and that case is about 2-3 pounds if I recall correctly. Not much but it adds up quickly. For some E-scrap the steel and aluminum is half the value.
most of the wire in the photos is low yield (different yards will estimate different percentages, actual percentage is around 40-50%) insulated #2 wire. Generally not worth stripping. Boardsort will buy as mixed wire, local yard will probably pay a little more. The ribbon wire is higher yield, though my yard won't distinguish this, boardsort pays more for it.

Looks like you have a broadcom commercial network switch, just tore into a bunch of these myself.
The main board in commercial networking equipment is generally high telecom class.
boards in img 9327 are low peripheral as shown, but the backside could change that.
The powersupply is just that a powersupply. Some scrap yards buy them, generally not worth shipping to boardsort.
Some yards buy the fans as small motor
The ribbon wire shown has gold ends that if cut off go to boardsort as connector ends. If I remember correctly that is the only wire in this switch that has the gold pins necessary to sell as connector ends. The other connectors are usually brass, but are too hard to clean up to yield any value and no-one wants them as is. I toss into shred steel and figure that is a fair chance that they get processed with the other non-ferrous that is in the appliances and other whole items that go as shred.
in img 9233 there is a board with a flashdrive. That board is high peripheral and the flashdrive board is also high peripheral. Very easy to peel off the case.

Generally speaking, if you can remove some screws or move a clip to remove something in electronics, do so. If something is soldered together leave it together. As you keep going you'll learn there are exceptions, some things won't be worth your time to take apart (I don't take apart PSUs) and some things that are soldered maybe need to be or make sense to remove.

Basically...pull the boards out of their housings, unplug any wires and don't just rip components off the boards.

If you've done regular scrapping you have a head start and if you haven't that's okay too. Either way for learning escrap this forum is a great resource. Read all the pinned topics, it'll help familiarize you with Boardsort policies (if you choose to do business with them) and some categories/grades of materials. Then read as much if the rest of the forum as you're able, if you go back to the earliest topics be aware that over time Boardsort has added grades and some of the grades given for boards may not be exactly the same. It's like if you sorted rocks by size and started out sorting rocks less than an inch across, 1-5 inches, 5-10, and bigger than 10; then added sorting for 5-6, 6-7, 7-8, 8-9, 9-10. The boards didn't change there's just more increments in the sorting.
